What to Cook Next Week No Images? Click here After a busy day, the last thing you want to do is spend hours in the kitchen pulling dinner together. Luckily, we have a wealth of delicious weeknight meals that will have you in and out of the kitchen in one hour or less. Meet our weekly dinner plan: five easy dinners for five busy weeknights, all sent in advance so you can get your shopping done ahead of time. Cook along with us! Your Week Ahead MONDAY Grilled Blackened-Fish Sandwiches Grouper, mahimahi, or another white-fleshed fish is perfect for these easy and delicious sandwiches. We keep this dinner simple, topping the grilled fillets with lettuce and tomato and serving them on soft buns spread with mayo. If you're craving a little something more, though, a couple strips of bacon never hurt. TUESDAY Spring Vegetable and Arugula Salad With Labne and Cucumbers Make the most of spring's bounty with this bright green salad served with rich and tangy labne. We use all the best spring vegetables—peas, asparagus, fava beans, and broccolini—plus arugula, cucumber, red onion, and fresh mozzarella. These all get tossed in a lemon-Dijon vinaigrette, piled atop the labne, and quickly polished off (at least, when we make it!). WEDNESDAY Grilled Lemon-Garlic Chicken and Tomato Kebabs With Basil Chimichurri With warmer weather and longer days, there's no reason not to grill dinner in the middle of the week, and these lemon-garlic chicken kebabs are just the thing to make. They're quick yet full of flavor, thanks to a garlicky marinade and a fresh basil and parsley chimichurri sauce that's perfect spooned over the skewers of meat and tomatoes. THURSDAY Vietnamese Grilled Lemongrass Pork Chops (Thit Heo Nuong Xa) You can bet we're grilling again when we've got this recipe for Vietnamese-style lemongrass pork chops on hand. Thin-cut pork chops quickly absorb the marinade of shallots, lemongrass, garlic, sugar, pepper, and fish sauce, and brown to tender perfection on the grill. Serve them with sliced cucumbers, on a bed of rice, and with a side of nuoc cham dipping sauce for a dinner that hits all the right notes. FRIDAY Flipped Frittata With Asparagus, Spinach, Ham, and Cheese A soufflé-like frittata packed with asparagus, spinach, ham, and cheese, that doesn't require turning on the oven? Sounds like the right way to end the week, if you ask us. This frittata is made on the stovetop, flipped once, and cooked until lightly browned. Your Weekend Project Ah, the weekend. Visions of time-consuming kitchen endeavors have been dancing in your head all week long, and finally you have the time to pursue them. But which one to choose? Let us guide your efforts with what we're taking on over the weekend. Make the most of your weekend with this caramelized-honey fried chicken. A brine of buttermilk and hot sauce leaves the chicken tender and seasoned to the bone, while extra-fine 00 flour makes for an especially crispy crust. Turn it into a feast (and use the rest of your buttermilk) with a batch of buttermilk waffles. |
