Your Week Ahead MONDAY Smoky Lamb Meatballs With Baba Ganoush Make meatballs a meal with this brown butter–enriched lamb variety, served over almond-butter baba ganoush. The meatballs—a mixture of lamb, fresh mint, raisins, almonds, and butter—can be cooked on the grill, or on a gas burner if it’s still cold where you are. TUESDAY Seven-Layer Salad With Chickpeas, Endive, and Yogurt Dressing When you know dinner's going to fall at a busy time, plan on this make-ahead salad. It takes only 20 minutes to stack up the layers: chickpeas, endive, salted cucumber, onion, celery, radishes, and yogurt seasoned with lemon, mint, and dill. WEDNESDAY Chicken Salad With Kimchi, Ginger, and Scallions Here’s a chicken salad sandwich for the kimchi-loving, the mayo-shy, and the hungry-yet-hurried.
