Welcome to Sunday Reset, where we share how we're unwinding and what we have planned for the week ahead. This time, Noah's been bit by the barbecue bug—and shares some inspo for summer weekend projects and quick grilled dinners alike.
Good morning! All I can seem to think about as the weather warms up and the endless rain starts to clear here in New York is busting out the grill. It's one of my primary summer joys, and though I'm not exactly a pitmaster like our friends at KG BBQ, I do have a small offset smoker/grill that I've been keeping in a friend's backyard. It runs on charcoal or wood, and I'll be using it to try my hand at all manner of smoked meats this summer, from brisket to baby backs.
I've been pulling inspiration from our library of recipes, and there are a couple of candidates I might retrofit for the smoker.
• These Coffee-crusted Barbecue Beef Ribs already have an earthy and bitter depth, but throwing them on the smoker all day over smoldering oak logs is going to take them to the next level.
• Simplest is best when it comes to these Dry-Rubbed Baby Back Ribs. They're one of the most straightforward cuts to dial in your live fire skills with—and a total crowd pleaser, to boot.
• You better believe I'll be smoking a pork shoulder at some point this summer, and when I do, I can't wait to try out this recipe for Carolina Gold Barbecue Sauce, a lesser known alternative to the classic sweet and sour tomato-based sauces of Kansas City and St. Louis.
