Good morning. Over the last two years, we've shared our "11 Easy Dinners Recipes for When It's Been a Loooong Week" article so many times and across so many platforms that I can almost tell you how many o's were added for effect. And, honestly, I should know—I wrote the thing. But here's the problem: I can't stand that article. It's not because of the recipes. (Of our site's low-effort, high reward dishes, those 11 are among the best.) Nor that a crock of devious spam bots infiltrated the comment section to promote products including but not limited to: Turkish hair transplants, beach buggy racing, an emergency electrician service, and numerous computer games. Rather, my displeasure stems from the article's introduction, where I assert that "most nights I'm not that interested in spending more than thirty minutes in my kitchen." That's a lie. In fact, the opposite is true: I'm perpetually interested in spending the most amount of time in my kitchen possible. Oftentimes, unfortunately, that's only 30 minutes. But if it's really been a long week, I'll clear my schedule, tell Siri to play "Come Away With Me," and hover by my stove for the two hours it takes Nigel Slater's Really Good Spaghetti Bolognese to come together. Or I'll open a bottle of whatever and sip a glass or two during the 50 minutes it takes for Amanda's Spatchcocked and Braise-Roasted Whole Chicken to finish in the oven. Either way, my cure for elevating morale during a rough stretch isn't hastily throwing together a meal—it's spending a looooooong time cooking. |
