I love my Five Two ceramic nonstick but it’s definitely not the best tool for searing—ceramic pans shouldn’t be used on heat higher than medium, or they will lose their nonstick quality.
Finally, someone set us straight! Cookbook author and video host Carla Lalli Music crisply explained in an Instagram post that high-quality, stainless-steel pans, when heated properly, act just like a nonstick pan, without any worry of toxins. Here’s the skillet that I use at home. When I fry an egg, I turn to this pan, not to my nonstick.

| | | | | | | | | When Upstate New York beckons | | | - In the past few years, new hotels and restaurants have mushroomed upstate, making weekend getaways a gratifying adventure—no more musty B&Bs! Here are a few places to add to your list:
- Inness: You can stay in a farmhouse nestled in the valley, or cabins lining the hillside. The restaurant food is seasonal and pleasingly simple. You can play tennis, golf, cornhole, croquet, and pool, and there’s a gym, a top-notch yoga flow class, an obstacle course, and free bikes. You can also do nothing, and have a delightful time taking in the view from Adirondack chairs by a fire pit.
- Wildflower Farms: Spend the night in a cabin with a fireplace and a pretty view of the Shawangunk Mountains. There’s a gym, a spa, hiking trails, and a big ol’ fire pit outside the restaurant and reception.
- Stissing House: If you’re anywhere near Pine Plains, make the detour to Stissing House. The 18th-century inn has had many lives, though none as glorious as its current incarnation run by Clare de Boer, a co-owner of King in the West Village. Chamberstick candles illuminate the many cozy rooms, which feature beamed ceilings and fireplaces. We had the rabbit and tarragon pie for two, and the plum crisp for two. I can’t think of a more romantic way to spend an evening!
