Good morning. In a few weeks' time, I'll find myself in the best place on earth: a tiny cabin on a tiny lake in an even tinier town in Northern Michigan. There, I'll share a single bathroom with 15 relatives, make a responsible amount of our 52 favorite cocktails, and fish, and fish—and then fish again. Whatever we catch that's worth keeping will get cleaned, broken down, and turned into the following:
1. Tacos. These can go high or low. If my 3pm Wiffle ball bout goes into extra innings, I'll opt for something like Amanda's low-maintenance fish tacos. If I've got time, patience, and this Mezcal Amaro in hand, I'll conquer these white fish escabeche tacos.
2. Cakes. Sometimes it rains in heaven up there. When it does, I want a cribbage board, two cold beers, and a mountain of these fish cakes.
3. Baked Filets. These five-ingredient, 15-minute baked filets from James Peterson prove that fresh fish doesn't need to be fussed with to taste great.
