When caught before the new shell hardens, they're the delicacy known as soft-shell crabs. There's very little of a soft-shell crab that you can't eat, though there are a few bits that should go before you fry them up (consult our guide to cleaning soft-shell crabs for more on that, or ask your fishmonger to do it for you). While there are many ways to prepare soft-shells (battered and fried are pretty killer), at home Daniel prefers to quickly sauté them in butter after lightly dredging them. The faster he can get a fresh soft-shell onto his plate, the better. As for that pan sauce, it's just browned butter, some frizzled capers, lemon juice, and parsley—a perfect topper to plump, juicy, and briny soft-shell crabs. The Kitchen Essential Tongs A good pair of silicone-topped locking tongs are perfect for transferring crabs from the frying pan to a serving platter. More Crab Recipes for Every Occasion |

The Best Barbecue and Grilling Accessories
Fire Up Those Grills No Images? Click here The Best Barbecue and Grilling AccessoriesWhether you're a novice griller or a serial tamer of the flame, weeding through the seemingly endless list of available grilling tools and accessories can be a daunting task. To make it easy for you, the team at Amazing Ribs have sorted through the good, the bad, and the ugly to bring you this list of grilling essentials. Collect them all, and you'll have pretty much everything you need for years of cookouts to come. Get the full story right here. Sure, you could squirt lighter fluid all over your charcoal to light it up...and your food just might end up tasting like it, too. A much better approach is to use a charcoal chimney, which keeps the coals stacked in a narrow cylinder. If you've ever used a gas grill and grown frustrated with unfixable hot and cool spots, this tool is for you. Made from hard anodized aluminum, the GrillGrate system sits directly on your existing grate, amplifying and evening out the heat, which allows for more even cooking, flare-up resistance, and exceptional sear marks. The worst part of grilling thin vegetables is that they're prone to falling through the grill grate into the fire below. You could thread them on skewers, but even then you often have to contend with each individual piece spinning around. A grill basket solves all of these problems. A quality spatula and tongs are essential for good grilling. Seek out ones with long handles, such as OXO's two-piece grilling set, to keep your fingers as far from the heat as possible. One of the keys to successful grilling is keeping your grate clean. There are a lot of grill brushes out there, but many of them fall apart quickly, leaving dangerous wire threads behind. Our favorite model is the Weber Three-Sided Grill Brush. Unlike cheaper brushes that shed bristles, this Y-shaped brush features interwoven bristles that stay on the tool and out of your food. To ensure consistent results and less fussing and fretting about the grill, you'll need an instant-read thermometer. We have yet to find one better than the super-fast Thermapen Mk4, which delivers the most accurate readings in a mere two to three seconds. Our experience has proven it to be a workhorse that can take a beating and keep on reading. Get the whole story (and read more equipment reviews) right here! |

The Kitchen Essential Cake Pans Good cake pans are essential for making better cake. They don't have to be expensive, but they do have to be good at steadily conducting heat, large enough to contain the rising batter, and light enough to keep the crust delicate.
